From the time I moved from Texas to the
Tri-Cities, I have been searching for a good pit BBQ!
Alas, over the years, it has proven to be
a fruitless search. Disappointing, yes, but it made me realize that I make a
great and tasty pit BBQ so I decided to bring AUTHENTIC TEXAS BBQ to the
Tri-Cities and that’s the beginning of COW, PIG and CHIKEN– Authentic Texas
BBQ.
So, If you're hungry for some great BBQ,

Custom Built BBQ Pits
Scott is a welder in addition to be a
great BBQ chef. The trailer below is a 6 compartment, 4 rack BBQ and smoker built to serve an army
or a few. It heats with both propane and charcoal and has a special
container for the wood chips of your choice to give meat that special
flavor. This one is built to last through your grandchildren. Regardless of
the size, Scott can build a pit to your specifications.
 
This smaller unit has five diamond plate racks are
each 2' X 3' that can feed 150 people or smoke a whole deer or pig. The
racks slide out so you can turn the meat. They can also be removed
completely for cleaning.
 
Design
- Three propane burners are located in the bottom of the unit. The next
level is for charcoal and wood chips. The rack above the charcoal is a fine
mesh screen to prevent ashes from rising. Drippings from the meat fall into
the bed of charcoal and add to the flavor of the smoke without causing
flames. This unit has two thermometers so you can track your temperatures at
different levels. Scott found out the temperatures are the same regardless
of the rack height. It can be used for low temperature smoking or run at
hotter temperatures for a faster BBQ.
